I like Dark Matter because they represent doing things a little differently. Their focus is on roasting where processing isn’t the headline — in short, a heavily processed coffee shouldn’t taste heavily processed. When brewing this coffee in the shop, I’m treating it closer to the Curve Gesha than the RAW Ruby Ruby. Both are advanced ferments, but this one really shines when brewed gently.
