This coffee, from new roaster Apricity, stood out strongly in testing: a co-ferment that doesn’t taste like a co-ferment. This superbly produced coffee leverages what can be a novelty process in order to accentuate an already gorgeous semi-washed coffee. Instead of big passion fruit, it’s sherbet lemon that jumps out most, with lavender and sweetness completing the picture.
